Debt Free Recipes Butter Chicken Rice & Beans Recipe

If you are at all into Dave Ramsey’s debt free plan, you know all about rice and beans and beans and rice.  When we were in our debt free hustle from 2010-2012 we ate our fair share of rice and beans to keep our grocery budget low.  But when you eat these food for several days, weeks, months or years it can get old and bland.   That’s why I’m showing you how we made our debt free push even easier to swallow- literally!  I’ve got more recipes on the way but here is one to get you started!

This one is called Butter Chicken but you don’t actually use chicken- check it out!

Ingredients:
  • Store Brand Chicken Broth (cooking the rice in broth gives it a delicious chicken flavor without having to buy chicken)
  • Store Brand Brown Rice
  • Store Brand Garbanzo Beans
  • Archer Farms Butter Chicken Simmer Sauce (Target)
  • Store Brand Sweet Peas
  • Onion
  • Chutney

Step 1:

Follow the cooking directions on the back of your rice package.  Substitute water with chicken broth.  If you are making a big batch, feel free to measure out one container of broth and fill in the rest with water if needed.  It’s a simple way to keep the flavor of this dish amazing and the cost low.

Step 2:

Saute an onion in a pan.

Step 3:

Add the chick peas to the onions and cook until warm.

Step 4:

Add one container of Archer Farms Butter Chicken Simmer Sauce to the chick peas and onion mixture.  Mix and let simmer.

Step 5:

Serve up your chicken broth infused rice, butter chicken mixture and some sweet peas on a plate!  I like to put a tablespoon of chutney in the butter chicken mix just to add a hint of sweet flavor!
