Easy 5 Ingredient Zucchini and Sausage Recipe

If you want a really quick skillet meal this summer that’s nutritious, uses up some summer squash bounty, and tastes amazing, this Zucchini and Sausage Squash Recipe is for you.  It can be made with regular Italian sausage or my favorite is chicken sausage.

It’s one of my go-to favorite recipes in the summer because it’s super easy to make and you feel good eating it!  So here’s how you make it!

This is a super quick recipe that uses up those tomatoes, summer squash, and zucchini from your summer garden!

Ingredients

  • 6 Italian Chicken Sausage Links
  • 1 zucchini
  • 1 yellow squash
  • 1 cup grape tomatoes
  • 1 Onion

Instructions

    1. Cut up squash and zucchini into cubes.
    2. Chop onions.
    3. Cut grape tomatoes in half.
    4. Cut up the chicken sausage into small pieces and saute in a little oil in a skillet until you get light browning on the meat- put to the side.
    5. In a wok or large skillet add a tbs of cooking oil and cook your onions.  Set onions aside.
    6. Add the zucchini and yellow squash to the pan and cook until tender.
    7. Once the zucchini and yellow squash are nice and tender add your onions, chicken sausage, and tomato pieces to the pan and cook all together for about 3 minutes or until the tomatoes are cooked.

Notes

Add salt as you see fit.  I don't add any seasoning to this dish because the chicken sausage adds enough flavor once it's combined with the veggies!  You'll be surprised at just how yummy this little combination of zucchini and sausage can be!
