Easy Fresh Cabbage Salad Coleslaw Recipe
This easy fresh cabbage salad first appeared in my Stuffed Turkey Tenderloin recipe post. A Thrifty Little Mom reader named Keri inquired about the cabbage slaw salad that I served with the stuffed turkey tenderloins so here is the recipe!
It is indeed a beautiful and very tasty dish! I usually serve it on New Year’s Day since I don’t care for cooked cabbage, but being the true Southerner that I am I have to eat cabbage to insure that the year is a prosperous one (along with black eyed peas for luck)!
This dish was originally served to me by my stepmother over 10 years ago. Through the years I have adapted her recipe slightly, but her one ‘rule’ remains: don’t add the ramen noodles or pour the dressing over the slaw until you are ready to serve it unless you like soggy salads.
Ingredients:
16oz shredded cabbage
6oz broccoli slaw (I usually rough chop the slaw because the strands can be very long)
1pkg Ramen noodles (any flavor because you don’t cook them or use the seasoning packet only use the dry noodles)
2Tbsp sesame seeds
2Tbsp either chopped or sliced almonds
2Tbsp butter
Dressing:
1 tsp sugar
½ tsp sea salt
¼ tsp freshly ground black pepper
1 tsp season-all (I like Tony Chachere’s More Spice)
1 clove garlic, pressed
¼ cup plus 1 Tbsp extra virgin olive oil
3 tsp vinegar
Directions:
- Sauté the seeds & almonds in the butter over a medium heat until toasted-be careful they burn quickly. Set aside and allow to cool.
- Once cooled, add the golden seed/nut mixture to your roughly cut cabbage and broccoli slaw.
- Next mix the ingredients for the dressing together in a shakable cup, shake and pour over the salad tossing until the dressing is thoroughly mixed with the slaw.
- Dressing:1 tsp sugar½ tsp sea salt¼ tsp freshly ground black pepper
1 tsp season-all (I like Tony Chachere’s More Spice)
1 clove garlic, pressed
¼ cup plus 1 Tbsp extra virgin olive oil
3 tsp vinegar
- Finally, break up the Ramen noodles (I do this part while still packaged by hitting it with the back of a spoon a few times) and add to the salad. Serve immediately.
The best thing about this salad is that you can serve it with diced chicken as your entrée or as a side dish to complement whatever main dish you are serving.
